Zuya Signature Fried Rice

Zuya Signature Fried Rice is a culinary masterpiece that redefines the art of vegetarian cuisine. Drawing inspiration from the rich tapestry of Asian flavors and culinary techniques, this dish transforms a humble staple into a symphony of taste and texture.

Ingredients:

  • Rice and Base:

  • White Rice: 1.5 kg

  • Water: 1.5 liters

  • Sugar: 65 grams

  • Salt: 45 grams

  • Monosodium Glutamate (MSG): 15 grams

  • Vegetables:

  • Diced Carrots

  • Diced Shiitake Mushrooms

  • Green Peas

  • Corn Kernels

  • Protein Substitutes:

  • Diced Vegetarian Char Siu

  • Diced Vegetarian Ham

  • Additional Toppings:

  • Braised Tofu: 2 slices

  • Vegetarian Goose (mock meat)

  • Baby Bok Choy: 3 stalks

  • Shredded Purple Cabbage

  • Celery

  • Sliced Chili Peppers

Preparation:

Cook the Rice:

  • Rinse the white rice until the water runs clear.

  • In a large pot, combine the rice with water, sugar, salt, and MSG.

  • Bring to a boil, then lower the heat to a simmer, cover, and cook until the rice is tender and the water is absorbed.

Prepare the Vegetables:

  • Peel and dice the carrots.

  • If the shiitake mushrooms are dried, soak them until rehydrated, then dice.

  • Measure out the green peas and corn kernels, setting them aside for later use.

  • Prepare the Protein Substitutes:

  • Dice the vegetarian char siu and vegetarian ham into small, bite-sized pieces.

  • Prepare the Additional Toppings:

  • Slice the braised tofu and set aside.

  • Prepare the vegetarian goose as per the instructions on the packaging.

  • Wash the baby bok choy and blanch in boiling water for a couple of minutes, then drain.

  • Shred the purple cabbage and chop the celery.

  • Slice the chili peppers thinly for garnish.

Cooking:

  • Fry the Vegetables and Protein:

  • In a large wok or frying pan, heat some oil over high heat.

  • Sauté the carrots, mushrooms, peas, and corn until they start to soften.

  • Add in the diced vegetarian char siu and ham, frying until they are heated through.

  • Make the Fried Rice:

  • Push the sautéed vegetables and protein to the side of the wok and add a little more oil to the center.

  • Add the cooked rice, breaking up any clumps, and fry together with the vegetables and protein.

  • Stir-fry for several minutes until everything is well mixed and the rice starts to get a little crispy.

Combine and Serve:

  • Arrange the braised tofu, vegetarian goose, and baby bok choy on top of the fried rice.

  • Garnish with shredded purple cabbage, chopped celery, and sliced chili peppers.

  • Serve the Zuya Signature Fried Rice hot, ensuring each plate has a good mix of the rice, vegetables, protein, and garnishes. Enjoy!
