Char Siew Noodles

​Char Siew Noodles is a delectable twist on a classic Asian dish, combining the heartiness of noodles with the savory and slightly sweet flavors of traditional char siew (barbecued pork). This vegetarian rendition redefines the culinary landscape, offering a plant-based alternative that doesn't compromise on taste and satisfaction.

Ingredients:

For the Noodles:

  • Your choice of Asian-style noodles (suitable for 3 servings)

Vegetables:

  • Baby Bok Choy: 3 stalks

  • Vegetarian Goose (mock meat): as needed

  • Shredded Shiitake Mushrooms: as needed

  • Char Siew Slices: 6 pieces (vegetarian mock char siu)

Broth:

  • Water: 1.5 liters

  • Salt: 20 grams

  • Sugar: 20 grams

  • Kelp Knots: 4 pieces

  • Dark Soy Sauce: a dash (for coloring)

Seasoning:

  • Tomato Ketchup: 1 tablespoon

  • A mixture of cooked oil and sesame oil: 1 tablespoon

  • Sambal Chili: 1 tablespoon

Preparation:

Prepare the Broth:

  • In a large pot, combine water, salt, sugar, and kelp knots. Bring to a boil.

  • Reduce the heat and let it simmer for about 20 minutes to allow the flavors to infuse.

  • Add a dash of dark soy sauce for a richer color and umami flavor.

 

Prepare the Vegetables and Mock Meats:

  • Clean the baby bok choy and blanch in boiling water for 1-2 minutes until crisp-tender. Drain and set aside.

  • If the vegetarian goose and char siu slices are not pre-cooked, pan-fry them until they are heated through and slightly crispy on the edges.

  • Shred the shiitake mushrooms and sauté them until tender.

Cook the Noodles:

  • Cook the noodles according to package instructions until al dente.

  • Drain the noodles and rinse under cold water to stop the cooking process.

Season the Noodles:

  • In a separate bowl, mix the tomato ketchup, the oil mixture, and sambal chili to create a seasoning sauce.

  • Toss the cooked noodles in the seasoning sauce until they are evenly coated.

Assemble the Dish:

  • Place the seasoned noodles in individual bowls.

  • Arrange the blanched baby bok choy, vegetarian goose, char siu slices, and sautéed shiitake mushrooms on top of the noodles.

  • Ladle the hot broth over the noodles and toppings.

Serve:

  • Serve the Vegetarian Char Siew Noodles hot.

  • Offer additional sambal chili or soy sauce on the side for guests to adjust the flavor to their liking.
