Mediterranean Chickpea Salad

Ingredients:
1 can of chickpeas rinsed and drained.
1 cucumber, diced.
1 bell pepper (any colour), diced.
1 cup cherry tomatoes, halved.
1/4 red onion thinly sliced.
1/4 cup Kalamata olives pitted and halved.
2 tablespoons fresh parsley, chopped.
2 tablespoons fresh lemon juice.
2 tablespoons extra-virgin olive oil.
Salt and pepper to taste.
Instructions:
In a large mixing bowl, combine the chickpeas, cucumber, bell pepper, cherry tomatoes, red onion, Kalamata olives, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Pour the dressing over the chickpea mixture and toss everything together until well combined.
Taste and adjust the seasoning if needed.
Let the salad sit for a few minutes to allow the flavors to meld together.
Serve the Mediterranean chickpea salad as a light and refreshing meal on its own or as a side dish.
