Vegetarian Braised Meat Rice (Serves 4-5)

This vegetarian braised meat rice recipe is simple and delicious. The combination of shiitake mushrooms and seasonings enriches the texture of the vegetarian minced meat and lean meat. The umami flavour from the mushrooms and the harmonious blend of the seasonings create a rich and flavourful dish. The use of light soy sauce, dark soy sauce, and other seasonings enhances the taste of the dish. The diced shiitake mushrooms absorb the flavours easily, resulting in tender and juicy meat substitute. Optionally, you can add scallion oil at the end to elevate the taste. Serve this dish with steamed rice for a nutritious and satisfying meal.


  • Rock sugar: 100g

  • Vegetarian minced meat: 250g (soaked in water)

  • Vegetarian lean meat: 1 pack

  • Light soy sauce: 50g

  • Dark soy sauce: 150g

  • MSG: 20g

  • Five-spice powder: 6g

  • Coriander powder: 6g

  • Pepper: 6g

  • Cornstarch: for thickening

  • Water: 2 liters

  • Salt: 25g

  • Shiitake mushrooms: 300g (diced)

  • Scallion oil: optional (to be added at the end)


Soak the vegetarian minced meat in hot water until softened. Drain and set aside.

Cut the vegetarian lean meat into small pieces and set aside.

Heat some oil in a pan and stir-fry the diced shiitake mushrooms until fragrant. Add light soy sauce, rock sugar, five-spice powder, pepper, MSG, and coriander powder. Stir-fry evenly.

Add water and season with salt. Add dark soy sauce for colour.

Simmer on low heat for 15 minutes. Then, thicken the sauce with corn starch to your desired consistency.

Finally, you can optionally add some scallion oil according to your taste preferences for enhanced flavor.
